How to properly dry fish in a dryer and how, if necessary, to make it yourself? What are the best ways to dry fish to give it the best taste? How to avoid the most common mistakes using these technologies? We will talk about all this in more detail in this issue and immediately please leave a comment at the bottom of the page to understand how successful the material turned out.

What are dryers and what are they for?

There are many varieties of dryers in terms of models, sizes, capacities, materials for manufacturing. There are frame and folding, stationary and hanging, designed exclusively for drying fish and universal, that is, they are also suitable for drying berries, mushrooms, nuts, vegetables, herbs, fruits, bee pollen.

All of them are united presence of walls from a mesh or gauze, excluding the contact of flies and their larvae with fish, and allowing air to do its job. As well as the presence of a door for loading and unloading the catch, shelves, hooks or wires to place the fish in the correct position.

It is in this opportunity to save your catch from infection with larvae and subsequent spoilage of products that the advantage of using various types of dryers lies in traditional way drying fish (by hanging on a rope or wire somewhere under a canopy, in an attic or balcony).

We make a dryer with our own hands

Modern online stores, as well as departments of fishing equipment in sports stores and markets, present the buyer with a wide variety of models of fish dryers in various options value for money.

But with all the variety of products offered, it is far from always possible to choose a dryer model that suits the needs of a particular angler. After all, the catches of different fishermen can differ dramatically in the number and size of fish caught. The home conditions in which the fish will be dried also differ. Therefore, many economic fishermen, adjusting the parameters of the device being created to fit their needs.

First of all, you need to decide Where will the drying take place?. If under a canopy or in the attic of a private house, there are no problems with size. If in one of the rooms, on the balcony or loggia of the apartment, then the dimensions of the future dryer should be calculated based on the possibility of placing it in these rooms for drying and subsequent storage. You also need to keep in mind the size and number of fish caught on the previous fishing. Or calculate these parameters for future catches.

If there is very little space, you can consider options for folding and hanging dryers.

After determining the required dimensions, you need to decide on the materials for manufacturing. They can also be very diverse. For the frame and the door, they usually use the bars, slats or boards left over from construction or repairs, the remains of an aluminum profile or corner - that is, any suitable durable materials.

  1. A door is hung on the assembled frame.
  2. The opening is hermetically sealed to prevent the entry of insects.
  3. A mesh is tightly attached to the walls (best of all, a mosquito net).
  4. Many people also stretch the net on the ceiling, but this is fundamentally wrong, since the deposited fly larvae can penetrate the cells and infect the catch. Therefore, the ceiling must be made solid, preferably from a plywood or plastic sheet.
  5. A tray is placed at the bottom for the timely removal of flowing fish oil.
  6. After that, shelves are made inside the dryer or several rows of wire with hooks are pulled (in accordance with the estimated size of the fish). Dryer ready!

Below are some examples of the original creativity of our anglers.

As they say, it is better to see once than to hear 100 times. Therefore, we invite you to watch the video from detailed description making a dryer with your own hands.

How and how much to dry the fish

The drying time and the choice of technology largely depend on the type and size of the caught fish, as well as on the gastronomic preferences of the angler himself.

Before drying the fish, it is necessary to salt it. Small fish can be salted whole. The larger one must first be gutted and cut along the back. And the biggest one will need cut into pieces suitable for the size of dishes for salting.

The duration of salting, again, depends on the size of the fish and the angler's taste preferences - the longer you salt, the saltier the fish will be. Enough on average 2-6 days. After that, the fish is taken out, washed running water and for an average of an hour it is placed in a bowl of clean water to soak and remove excess salt.

After soaking, the fish must be dried by laying it on a simple towel and placed in a constructed dryer.

Exist two ways to hang fish on hooks or ropes of the dryer - behind the head (through the eyes) and behind the tail (after making a hole in the right place of the body of the fish with an awl).

Each method has its pros and cons. For example, if you hang it by the tail, then the fat will drain through the mouth and the fish may come out dryish. And if for the head, then the remaining fat can give the meat a peculiar taste. In general, each fisherman chooses the method of hanging according to the type of fish and with his experience and taste preferences.

After hanging, the dryer is placed out of direct sunlight. Best in a draft. The catch is dried for about a week. Samples are taken starting from the smallest specimens.

Possible mistakes

When salting and drying fish, the most common mistakes should be avoided.

  • Salt for salting should be ordinary, coarse grinding. In no case not iodized! Its use is guaranteed to spoil the appearance and taste of dried fish.
  • It is not necessary to wash the fish immediately before salting (it is washed only before soaking), otherwise it will inevitably become dry.
  • Herbivorous fish should not be salted without gutting in hot weather. The algae remaining in its insides will begin to rot - the fish will have a bitter aftertaste or it will completely deteriorate.
  • When placing fish in the dryer, care must be taken that they did not touch. This will prevent uniform drying.

Dried fish - delicious and useful product. Some are happy to eat such fish with the same boiled potatoes and drink kvass. However, choosing a truly high-quality dried fish is not so easy. Violation of drying technology, improper storage, the use of stale raw materials - all this can lead to severe poisoning. In order to be sure of the quality of the product, you can try to wither the fish with your own hands.

The difference between curing and drying

Drying fish is its gradual dehydration. Before this, the carcasses are soaked in a salt solution. After the loss of moisture, the fish becomes ready for eating, it does not need to be processed thermally.

The drying process differs from drying in the length of time. Drying requires at least a day to achieve the readiness of the product. Drying takes only 6-7 hours.

In addition, drying involves fermentation - the breakdown of organic substances under the influence of enzymes. This does not happen during the drying process.

Equipment for drying fish

If you are a lover dried fish and you want to cook it often, it may make sense to purchase certain equipment for this. Here are the types of devices that exist on the market today.

  • Closet. This apparatus is designed for drying fish using circulating air currents. It is equipped with a timer to enable you to set different programs for various types of products (fish, fruits, vegetables and other products). And also the drying cabinet has a built-in ventilation system to create air flows, tubular electric heaters for drying them, a timer to turn off after the time has elapsed. The duration of drying fish in such a cabinet is approximately 13 hours.
  • Camera. In fact, the principle of operation of the drying chamber is the same as that of the cabinet. This is a device in which air circulates with the help of a built-in fan. When setting the required program, the device itself selects the temperature and direction of air flows, and turns off automatically. The water that the fish loses during the drying process leaves the unit either through open doors, or through an evaporator pipe, or is dried using heating elements.

  • Dryer. This device differs from the above in that it can be electric, or it can be self-assembled and not depend on the power supply. The most popular model dryers - hanging, equipped with a mesh to protect against insects and dust. Such a dryer can be hung anywhere where there is air circulation: on the veranda, on the balcony, on personal plot. As for its electric counterpart, such a device, of course, is more expensive, but it speeds up the process and can be used even in a city apartment. Represents small closet stainless steel chick with several removable mesh drawers for laying fish.
  • Net. In my own way appearance the dryer net is somewhat reminiscent of a muzzle for catching fish. Inside, it is divided into several sections, in which fish carcasses are placed for subsequent drying. The mesh is hung out in the open air, where the process takes place.

How to make a drying tool at home

Let's walk through the process of making a fish dryer step by step. To do this, stock up on the following materials:

  • drywall profile;
  • "corners" made of aluminum;
  • plastic mosquito net;
  • 9 metal rods 70 cm long;
  • thick wire;
  • a sheet of polycarbonate material for the cover with a thickness of 0.5-0.7 mm;
  • rivets, nuts, bolts, washers (5 mm);
  • "corner" made of plastic for fixing the mesh from the outside;
  • decorative "corner" made of metal for the lid.

Tools:

  • drill, it is better to take with a battery;
  • Sander;
  • riveter;
  • pliers;
  • scissors;
  • wrench;
  • stationery knife.

We will design a device with parameters:

  • height - 120 cm;
  • length - 100 cm;
  • width - 70 cm.

The dryer will be three-level: at each level we will place 3 metal rods, on which we will hang the fish carcasses.

Our work begins with the manufacture of the dryer frame. For this we cut aluminum profile: we make 4 pieces of 120 cm, 6 of 100 cm and 6 of 70 cm. We retreat about 20 cm from the floor and mount the rectangular box by screwing the aluminum pieces perpendicular to the longest ones.

It is very important to attach the profile so that a plane is obtained - this will facilitate the installation of the grid. We strengthen the bottom of the box with aluminum “corners”, screwing them from the inside.

We attach metal rods perpendicularly to the profile - 3 pieces at each level. The distance between them must be the same. On these rods we “string” wire hooks for hanging carcasses.

Then we begin to attach the grid. Try to cut it off with a margin, turning it inward when attaching. Make sure that there are no gaps through which unwanted "guests" can penetrate: flies, bugs and other insects. The bottom of the box is also sheathed with mesh.

The cover will be made of polycarbonate material. First, from the decorative "corner" we mount a frame of such a size that it can cover our box without gaps. We cut out a rectangle with a clerical knife, insert it into this frame, screw it. Now we can easily open and close our dryer.

The device is designed, the fish is caught and soaked in a salt solution - it's time to start the drying process. Take on board a few simple life hacks that will allow you to make a tasty and healthy product:

  • put the fish out to dry in the evening and let it stand until the morning: in the dark, the air temperature is lower, and there are no flies;
  • for the first hours, periodically blow the carcasses with a fan - this will help to “blow out” the specific smell and speed up the drying process;
  • start your practice of self-drying fish with small specimens: they cook much faster than large individuals and will not deteriorate in the sun.

It's so easy and simple to create a device for drying fish with your own hands at home and then cook a tasty and healthy product for the whole family.

A master class on making a dryer for drying fish can be viewed in the video below.

The idea to make a dryer came to my mind right after I finished the renovation in the house. There were many different unused materials left that could be used for this case. And, to be honest, I'm tired of drying fish on ropes and wires covered with gauze. Firstly, it is extremely inconvenient, and secondly, such a primitive method of drying does not completely exclude its infection with flies, which, you see, is no good.

materials

So, what should be the ideal dryer? Thinking about the future design in my head, I tried to get a strong, light and roomy box in which it would be possible to dry different fish, both large (balyk) and small, for example, roach. Therefore, as a material for the frame, I chose a profile used for mounting drywall and an aluminum corner. I decided to close the side walls and bottom of the dryer with a dense mosquito net from plastic.

I immediately planned to make the lid also from the net, but the neighbor suggested (many thanks to him) that the fly can lay eggs through the upper holes without even contacting the fish. To avoid such troubles, I made it from polycarbonate and a decorative metal corner, and it turned out to be a feast for the eyes. All units of the dryer were fastened with rivets and small bolts with nuts and washers of the appropriate size (diameter 5 mm). Here, in principle, and all the materials. Oh yes, for a better fixation of the grid at the corners of the structure, you will need more plastic corner(2/2 cm).

Instruments

It took only two days to make a do-it-yourself drying box, and incomplete. I worked slowly, enjoying the process. To translate this idea into reality, I needed the following tools:

  • cordless drill;
  • Bulgarian;
  • riveter;
  • pliers;
  • wrenches;
  • scissors;
  • stationery knife.

Dimensions

The dimensions of my dryer: height - 1.2 meters, length - 1 meter, width - 70 centimeters. Why are they like this? These figures, of course, are not taken from the ceiling. When deciding on the size of the box, I thought about how to make loading and unloading the fish as convenient as possible. With my height (180 cm), these parameters turned out to be optimal. Drying chamber turned out to be roomy, consisting of three levels, each of which has three metal rods for hanging fish. In it, you can wither a hundred weighing 0.3 kg or five hundred pieces at a time. Agree, quite good.

Mounting

Conventionally, the whole work can be divided into three stages:

  • frame assembly;
  • sheathing of the box with a mesh;
  • cover manufacturing.

First of all, I made blanks from the profile. To do this, I cut it with a grinder as follows: four segments 1.2 meters long (for corner supports), six meters and the same number of seventy-centimeter crossbars. Then, at a distance of 20 cm from the floor, I alternately fastened the blanks together with rivets. In order for the parts to fit better to each other, the profile at the joints must be adjusted by making small cuts on the side surfaces. As a result, I got a rectangle standing on legs.

In the same way, the top and middle of the structure were assembled. I additionally reinforced the bottom of the box with an aluminum corner, which I screwed from the inside. Thanks to this, the dryer has acquired additional rigidity. Important nuance: the profile should be fastened so that its outer surfaces form an ideal plane between them. Subsequently, this will greatly facilitate the process of mounting the grid.

Actually, to implement the second stage, it is desirable to have an assistant. In this sense, I was lucky, my wife agreed to help. It was much more convenient to work with the mosquito net together: she held it where it was needed, and I fastened it. It is better to cut the mesh for each side with a small margin so that you can wrap it inward a little, thereby improving the overlap with the adjacent canvas. The main task in this business is to close all possible cracks so that the flies cannot get to the fish.

DIY fish dryer ready

The lid was also easy to make. Having cut out a piece of polycarbonate (thickness 0.6 mm) of the appropriate size with a clerical knife, I screwed it to the frame from the decorative corner with small bolts. It turned out nice and secure. Such a cover is easy to remove, put on, and most importantly, it completely eliminates the possibility of contamination of the product from above.

Conclusion

Finally, dear readers, I want to draw your attention to a few tricks that will help you not only speed up the process of drying fish, but also improve its quality.

Firstly, it is advisable to load it into the dryer at night (at this time it is cool in the yard, besides, there are no annoying flies).

Secondly, the first day it must be blown by a fan, this will significantly speed up drying and eliminate the unpleasant odor.

Thirdly, do not even try to dry large roach, bream or crucian carp in the raw in the heat. In summer, the insides of these fish are full of greenery, which, under the influence of high temperature, begins to rot, which inevitably leads to their deterioration.

The drying box should be placed in a place where it will not be exposed to precipitation and direct sunlight (in the shade, under a canopy, in a draft). If you use these simple recommendations, then, be sure, at the output you will get a truly high-quality and useful product that your loved ones will appreciate.

Often, after successful fishing, the question arises of processing a large catch. What to do if you no longer want to fry and boil fish, and there is simply no drying device yet, it has not been before. But everyone loves dried fish, but in order to dry it, you need to make a dryer.

For such a case, this is just a video on our urgent fishing topic. This device is very simple and at the same time effective, it will perfectly show itself at home and is not afraid of flies. It is made very cheaply from plywood.

Vyalka is a parallelepiped fixed with aluminum corners. The mesh is suitable for the one used for curtaining windows from insects.

The mesh needs to be larger so that the elastic band presses it against the structure with a margin. Inside there are two plywood slats at the distance of the back mesh so that the flies cannot lay their larvae.

Window carnations are stuffed on the rail at a slight angle. Hats need to be bitten off, while the nails are sharpened. The fish simply puts on these hooks. Made two rails. One is located on top, it is convenient to use for large fish. At the middle level, respectively, medium and small fish are hung.

How to choose a dryer for fish

Many housewives tend to buy a dryer cheaply, but this indicator should not become the main selection criterion. The main thing is to study the functions of the cabinet, determine the dimensions and roughly imagine the place of its future storage. Only in this case, the purchase will be successful, and inconvenient inventory will not appear in the kitchen - bulky and, in fact, useless. Here are the main selection criteria:

  1. Device features. There are mechanical, manual and electric dryers. The last option can be safely called the most progressive, since it simplifies the work of the hostess and reduces the time interval for obtaining dried fish. It is important to understand that such structures will cost an order of magnitude more expensive.
  2. Functions. The more additional features a dryer has, the more expensive it will cost. It is important to understand that the presence of buttons does not indicate the versatility of the selected model, some of them may remain unused throughout the service life. So it doesn't hurt to read the manual first.
  3. Design. In this matter, it is advisable to build on the taste preferences of the hostess. Models are found in round, oval, rectangular shapes, have one or more tiers. To place the structure in the kitchen, you must first study the parameters (height, width, depth, length), dimensions.
  4. Manufacturer. Most buyers trust imported products, but Russian manufacturers are not inferior in quality, functions and service life. There is an extensive list trademarks, which are engaged in the serial production of dryers. Reviews of their products are also positive.
  5. Price. This selection criterion depends on a number of indicators. If you buy products from a foreign manufacturer, the cost is too high. When choosing a dryer from a domestic manufacturer, you can save on the purchase, but at the same time not lose any quality parameters.
